These are our version of quesadillas. We have to use small tortillas because I need gluten-free tortillas, and all the big ones at our grocery store are flour. The only ones made of corn are tiny. So instead of folding, I use one on top and another on bottom. We throw in cheese, chicken, ground beef, bell peppers, and onions. We usually make these the night after homemade-pizza night so we can use up the toppings we had left over. I cook them over medium heat for about five minutes on each side. I use either a griddle pan or a round frying pan, depending on what’s unpacked at the time. 🙂 Serve with sour cream and salsa and you’re ready to go.
